Located along the Alishan Highway, Xiding is a popular tourist attraction as the rising fog climbs up the mountainsides and creates impressive cloud sculptures.
In the vicinity of Xiding, the warm-temperate zone meets the subtropical climate zone, which makes it possible to grow a variety of agricultural products in this region. These include persimmon fruits and butterfly orchids.

Our Alishan High Mountain Oolong comes from a small tea garden belonging to a farmer friend. There, the tea plantations are managed sustainably and the tea is only harvested by hand in small batches.
Our Alishan High Mountain Oolong Tee Spring's batch was only slightly fermented, as is traditionally the case.
The batch from winter 2022 has a somewhat stronger, wintergreen aroma with a balanced creamy - vegetal character but does not lack the scent of orchids. This is underscored by the milky character that has made this type of tea popular.

Our Gao Shan - High Mountain Oolong Tea is traditionally handpicked, this way only the best leaves find their way to you.
After that, the leaves are stored in a dark room to wither before the tea is fermented.
During fermentation, the tea leaves are gently rubbed and shaken so that the juice of the leaves escapes.
To stop the short fermentation process, the leaves are briefly heated. the degree of fermentation of this excellent oolong tea is 20 - 30%.
