Dieser Grüne Tie Guan Yin (Tieguanyin) is really a bit unusual, because this tea was made from the Tie Guan Yin cultivar as it should be, but it was not fermented but instead expanded like a green tea and then lightly roasted.
That's why it got its name Sheng Cha, which means raw (unfermented) tea.
Like our other Tieguanyin siblings that you can find in our online shop, this tea comes from a small tea garden in the Lishan cultivation area at about 2600 meters above sea level. Due to the slow growth, the tea bushes can only be harvested once a year.
on the tea plantations in the Taiwanese high mountains, the tea leaves only develop very slowly. Due to the slow growth, this TGY gets its great flavors without any astringency.
The infusion shines out of the cup in a delicate yellow and the tea leaves are jade green.
The gentle production process develops flavors reminiscent of apricot or blossom honey. The finish is beautifully silky with floral aromas.
