Dieser Golden Iron Goddess Tieguanyin (Tieguanyin) is cultivated on one of the highest tea plantations in Taiwan in the Lishan area. The tiny tea gardens are located at 2600 meters above sea level where the Qing Xin cultivar for the popular High Mountain Oolongs is normally grown.
At this height, the growth of the tea leaves develops very slowly, which creates its characteristic round taste.
Due to the high cultivation region, the harvest is only possible once a year, which makes this tea a real rarity.
When harvesting, the "stem" which connects the leaves is almost completely avoided, as this contains too many bitter substances in the TGY variety.
Our Golden Iron Goddess Tieguanyin Shu Cha was about 30% fermented after harvesting and then lightly roasted. Taiwanese would colloquially say "Shu Cha".
As a result, the infusion shines out of the cup with a light amber tinge, almost like a rose wine.
Due to the gentle production, very sparkling flavors develop which make the tea appear very fresh. In terms of taste, our Tieguanyin has an amazing dynamic, so when the tea is still very warm you can discover aromas reminiscent of gingerbread spice or aniseed. However, if the tea cools down, the bouquet changes and sweet notes of liquorice come to the fore.
